Wagyu cattle are a Japanese breed of cattle which has the genetics for producing beef which is marbled, tender and has good texture and colour. Marbled Beef has the muscle finely interspersed with monosaturated fat which has a low melting point and melts out of the beef during cooking, leaving a lean piece of beef which is exquisitely tender, tasty and juicy.
Yalandra Pastoral Company has 500 fullblood Wagyu cows. These cows have been carefully selected so that they have a good milk supply, gentle disposition and produce calves that have a high marbling ability. The calves spend the first 9 months suckling the cow. They are then weaned and grown out on the lush Mitta Valley pastures over the next 21 months. Some of the cattle are grain supplemented to increase the marbling.
